Spherification
Zoals ik een tijdje geleden schreef heb ik de spullen aangeschaft om mijn eerste stappen in de magische wereld van spherification te zetten…
De potten zijn behoorlijk groot en met respectievelijk 400 en 300 gram inhoud kan ik een behoorlijke tijd vooruit.
De maatvoering die op de potten aangegeven staat is een vage;
Je moet 4 afgestreken lepels alginaat oplossen in 120ml water en hierna er 120 ml vloeistof aan toe voegen. Deze verhouding heeft de eerste keer een veel te dikke substantie opgeleverd waar niet mee te werken was.
De 4 lepels calciumlactaat in 250 ml water waren ook een beetje te veel van het goede.
Aan de hand van de blog op khymos die me gemotiveerd heeft dit te kopen, ben ik andere verhoudingen toe gaan passen.
2 gram sodium alginaat
200 gram water
50 gram siroop
4 gram calciumlactaat
300 g water
Links de oplossing met het alginaat, midden de calciumlactaat en rechts een bakje water om het in af te spoelen. Aan de rand zie je enkele geslaagde capsules.
Om zeker te weten wat ik er mee kan heb ik de capsules in warm water gelegd om te kijken of ze temperatuur-constant zijn, wat zo bleek te zijn:
Hierna heb ik gekeken hoe makkelijk het was vaste stoffen toe te voegen aan de capsules. Dit blijkt goed te gaan door het deel op een theelepel met de vloeistof in het lactaat te laten zakken.
Links de gewone capsules, boven met kruiden erin en vooraan met een rozijn erin.
Wat moet je ermee zullen velen zich afvragen…
De eerste echte toepassing ga ik binnenkort uitproberen met een tomatensoep-consommé welke ik in capsules op wil dienen in een basicilum-blad. Dit als onderdeel van het tussengerecht met kerst.

Savez vous ce qu’il se passe au niveau moléculaire pour ces techniques ou pouvez vous nous orientés vers des sites qui l’expliquent?

Les produits de TexturePro sont intéressants. Le forum http://www.molecularcuisine.org indique dans l’un de ses forums que TexturePro met des quantités importantes de Maltodextrine dans ses produits. La maltodextrine est un sucre qui permet d’améliorer la solubilité d’une préparation (pour une sphérification par exemple). Le revers de la médaille: il faut utiliser une quantité d’ingrédients plus importantes que pour les autres marques d’un même ingrédient (sans maltodextrine). TexturePro est donc non seulement un fournisseur d’ingrédient les plus chers mais aussi leurs ingrédients sont donc “incompatibles” avec les recettes qui sortent de leurs livres!
